Double bishop/1 king How on earth can you possibly checkmate with 2 bishops and a king? For ex: Say your opponent only has the king left. And say you only got two bishops and your king...it wouldn't be a draw would it?

No, you can force mate, it's not too hard. you just have to make use of zugzwang. www.ex.ac.uk/~dregis/DR/mates.html#RTFToC5

against Kasparov give me two bishops and a king against a king only and i can mate even Kasparov...Of course the Bishops must not be of the same color...

And yet, I personally find K + R easier to mate with than K + BB though going by the values, the former is 'weaker'.

Same... I could probably mate any position using my king and rook against a king alone, it's just the complications of the pieces that really screw me up.

tambori,
How about a K+B+N in less than 40 moves?

If I encountered this situation I would probably say: "I forget how to mate with K+B+N, wait a few hours, I will consult the internet..."

Later when I have found the site I might say "This is the website I was talking about... Are you interested to try it out?" (I will hope he's not gonna be interested, hehe)
